The Archive

Luca Caviezel (1923-2020) is unanimously considered one of the greatest experts on gelato. In particular, his books are considered a “bible” for all professionals in the field.

The “Luca Caviezel and Carlo Pozzi Archive” contains the most significant aspects of the collection of documents that the Maestro donated to Longarone Fiere Dolomiti a few years ago, thanks above all to his friendship and esteem for Fausto Bortolot.

It consists of thousands of documents that Caviezel wrote, collected and used over the years in his research, in the preparation of teaching programmes for countless training courses and in the development of his important publications.

The Archive contains his own writings and notes, images, publications, gelato recipes, articles extracted from international texts and trade magazines he wrote. It is a valuable resource for anyone wishing to explore the many aspects and principles underlying gelato production, with particular regard to the balancing of ingredients, which Caviezel himself introduced for the first time in Italy in 1971, during a course for gelato makers in Milan.

Donation, classification and public access

In the act of donation to the Longarone Fair, the Maestro stipulated that this material should be used to establish a documentation centre also named after another well-known master and friend, Carlo Pozzi from Milan, with whom he shared the principles at the basis of artisanal gelato.

The work began with the digitisation of all the paper material and its subsequent classification and cataloguing to make it easily accessible. A valuable contribution was made by Dr Salvatore Cannavò, a well-known and respected food technologist, who, thanks to his expertise and collaboration with Caviezel, was able to identify the salient aspects of each document, group them by theme and define a classification system that facilitates their use.

Now, thanks to the “GELATOn the ROAD” project, funded by the European Commission, a selection of the most significant documents can be consulted free of charge by everyone.
